WASABI PEA CRUSTED SALMON
Ingredients
1, 2-2 ½-pounds salmon filet, skin on
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons mayonnaise
1 teaspoon fresh ginger, grated
2 large cloves garlic, minced
1 cup wasabi peas
2 tablespoons olive oil
3 tablespoons butter
Instructions
Cut salmon filets into 4 equal portions. Season on both sides with salt and pepper.
Combine mayonnaise, ginger, and garlic in a small bowl and spread over each piece of salmon on the flesh side only.
Place the wasabi peas in a food processor and pulse until a powder forms, but still leaving some small chunks for texture. Spread the processed peas over the salmon, pressing into the mayo to adhere.
Heat olive oil and butter in a large skillet over medium high heat. When pan is hot, place salmon filets flesh/wasabi crust side down in the oil. Let cook until golden brown, about 3 minutes and flip over. Cook for another 3 minutes uncovered and then cover and cook another 2-3 minutes until fish flakes easily by is still translucent and rosy colored on the inside.
