THE FUDGIEST CHOCOLATE BROWNIES
Ingredients
2 sticks butter
2 ½ cups semi-sweet chocolate chips, divided
⅔ cup flour
½ cup unsweetened cocoa powder
1 teaspoon espresso powder
1 ½ teaspoons baking powder
1 teaspoon salt
4 large eggs
1 ¼ cups sugar
2 teaspoons vanilla extract
3 tablespoons vegetable oil
Instructions
Melt the butter in a medium saucepan. Reduce the heat to low and add 2 cups of the chocolate chips to the melted butter and whisk until smooth. Remove from heat and set aside to cool while you prepare the rest of the ingredients.
Combine the flour, cocoa powder, espresso powder, baking powder, and salt in a small bowl and whisk to combine. Set aside.
In a large bowl, combine the eggs, sugar, vanilla extract, and vegetable oil. Whisk until smooth. Add the melted chocolate mixture to the large bowl and stir to combine.
Gradually fold in the dry ingredient mixture until just combined. There will be some small lumps in the mixture. Do not overmix.
Spray an 8” x 11” (or similar size) baking dish with non-stick spray and line with parchment paper. Pour the batter into the prepared pan and sprinkle the remaining ½ cup of chocolate chips over the top.
Bake for 35-40 minutes until set in the center. Let cool for at least 1 hour.
