THANKSGIVING LEFTOVER TURKEY, STUFFING, AND CRANBERRY QUESADILLAS
Ingredients
2 tablespoons olive oil
4, 8” flour quesadillas
2 cups shredded cheddar cheese
1 ½ cups leftover turkey meat
1 ½ cups leftover stuffing
4 tablespoons Hellmann’s Light mayonnaise
1 cup cranberry sauce
1 cup baby arugula leaves, packed
Instructions
Heat oil in a large skillet (large enough to hold 2 tortillas side by side or use two smaller skillets) over medium heat. Place 2 tortillas in the hot skillet and top each with ½ cup of the cheese.
On one tortilla, place ¾ cup of the turkey meat and on the other pat down ¾ cups of the stuffing. Spread 2 tablespoon of the mayonnaise and ½ cup of the cranberry sauce over the stuffing. When cheese is melted and tortillas are browned, gingerly flip the tortillas on top of each other careful not to let the ingredients spill out in the process.
Press to adhere and sear for one more minute for all ingredients to meld and melt. Repeat with the remaining ingredients.
Cut into wedges, serve over argula greens, and DEVOUR!
