SWEET AND SPICY PINEAPPLE SHRIMP CANAPÉS
Ingredients
½ pound cooked shrimp, chopped into small pieces
½ cup pineapple, pressed dry with paper towels and chopped into small pieces
¼ cup scallions, chopped
¼ cup Hellmann’s Spicy Mayonnaise
2 tablespoons fresh dill, chopped
¼ cup water chestnuts, chopped
1 large English cucumber, cut into ¼ – ½” thick rounds
Instructions
Combine all of the ingredients, except the cucumbers, in a small bowl and mix well to combine. Chill in the fridge until ready to serve.
Place a heaping tablespoon of the shrimp mixture on each cucumber round. Garnish with more dill, cilantro leaves, or edible flowers (optional).
