SUPERBLY HERBY GRILLED SWORDFISH
Ingredients
2-2 ½-pounds swordfish steaks (about 1-1 ½” thick)
1 lemon, juiced (about 2 tablespoons juice)
2 tablespoons soy sauce
½ cup flour
3 tablespoons Dish off the Block Superbly Herby Spice Blend
¼+ cups olive oil
Instructions
Preheat your grill* to 450-500 degrees. Line a baking sheet with foil.
Place the swordfish steaks in a shallow baking dish. Whisk together the lemon juice and soy sauce and pour over the fish turning to coat. Let marinade at room temperature for 30 minutes.
Combine the flour and Superbly Herby spices in another shallow dish and whisk to combine.
Take the filets out of the marinade and let any excess moisture run off. Press the fish in the herbed flour mixture to coat on both sides. Shake off any excess. Place the coated steaks on the prepared baking sheet. Drizzle them generously with olive oil over the tops.
Place the steaks, oiled-side-down, on the hot grill and close the lid. Sear until golden brown and grill marks form on the first side, about 4-5 minutes (note you can turn the steaks once after 3 minutes if you want to make criss-cross grill marks). Flip the steaks and drizzle with more olive oil. Close the lid and cook for another 4-5 minutes.
They are perfect when a fork easily slides in and out of the center of the filets. Do not overcook!
*Note – you can also pan sear the steaks in 2 tablespoons of olive oil.
