STRAWBERRY AND MINT QUINOA

Ingredients

1 cup raw tricolor quinoa

1 teaspoon salt

3 tablespoons strawberry preserves

2 tablespoons butter

½ teaspoon black pepper

1 cup strawberries, chopped

3 tablespoons mint, chopped

Instructions

Place the quinoa and salt in a large sauce pan with 2 ¼ cups of water.  Bring to a boil and then reduce the heat to low.  Cover the pot and cook for 15-20 minutes until all of the moisture is absorbed and the small ‘germ’ has popped out of the kernels.  Let sit for 10 minutes, covered, before finishing.

Melt the strawberry preserves in the microwave and whisk until smooth.

Add the preserves, butter, black pepper, strawberries, and mint to the quinoa.  Stir until the butter is melted and everything is well combined.  Garnish with more mint.

Serve hot or cold.
