SET IT AND FORGET IT PHILLY CHEESESTEAK SANDWICHES
Ingredients
3-3 ½ pounds chuck roast
½ teaspoon salt
½ teaspoon black pepper
5 tablespoons olive oil, divided
3 large onions, cut into ½” thick slices
6 large cloves garlic, chopped
1 pound mushrooms, sliced (I like a combination of button and cremini)
1 teaspoon Dish off the Block Ciao Bella Italian Spice Blend
2 teaspoons Dijon mustard
1 ½ tablespoons Worcestershire sauce
1 quart beef stock
2 green bell peppers, sliced into ¾”-1” thick strips
1 red bell pepper, sliced into ¾”-1” thick strips
12 hoagie or French bread rolls
24 slices Provolone or Swiss cheese
Instructions
Preheat oven to 325 degrees.
Season the chuck roast with the salt and pepper on all sides.
Heat the olive oil in a large 5-7 quart Dutch oven over medium high heat. When the oil is almost smoking, add the seasoned beef and sear for 4-5 minutes on the first side and flip and sear on the other side for another 3-4 minutes until mahogany brown in color. Turn the roast on its sides and sear all over. Timing will vary depending on how thick the roast is.
Add the onions, garlic, mushrooms, Italian seasoning, Dijon, Worcestershire to the pan and stir to combine. Add the beef stock and bring to a boil. Cover the pot and place in the oven for 2 ½ hours.
Remove the pot from the oven and place the peppers in the pot. Stir to combine and flip the meat over. Recover the pot and place it back in the oven for another 1 ½ hours until the meat is falling apart. Remove the pot from the oven and, using 2 forks, shred the meat into bite size pieces.
Increase the oven temperature to 400 degrees.
Cut the hoagie rolls in half and place them, cut side up, on a foil lined baking sheet. Drizzle them with the remaining 2-3 tablespoons of olive oil. Toast them in the oven for 4-5 minutes until they are toasty and lightly browned.
Top the bottom halves of each roll with a heaping portion of the meat, onion, mushroom, and pepper mixture. Top with 2 slices of the cheese and place them back in the oven for 3-4 minutes until the cheese is melted. Top with the other half of the roll and serve immediately. Devour!!
