SALMON WITH TURMERIC ORANGE CARAMEL

Ingredients

1 cup brown sugar

½ cup orange juice

⅓ cup soy sauce

2 tablespoons turmeric powder

¾ teaspoon Dish off the Block Ragin’ Cajun Spice Blend

2 pounds salmon filet, cut into 6-8 ounce portions

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons olive oil

Instructions

Place the brown sugar, orange juice, soy, turmeric, and Cajun spices in a large saucepan.  Cook over medium heat whisking until it comes to a boil.  Note it will bubble up so be careful to keep whisking and remove from heat if it starts to bubble over.  Reduce the heat to a simmer and let cook for 30-40 minutes, whisking occasionally, until a thick and syrupy caramel forms.  Remove from heat – it will continue to thicken as it cools.

Preheat oven to 400 degrees.  Line a rimmed baking sheet with foil.

Place the salmon portions on the baking sheet and season with the salt and pepper.  Drizzle the olive oil over the tops of the fish.

Bake for 10 minutes.  Remove the pan from the oven and liberally coat the fish with the caramel.  Place the pan back in the oven and bake for an addition 3-5 minutes until the fish is just cooked through and flakes in the center with a fork.  The flesh should be slightly translucent in the center.

Serve the glossy fish over rice or couscous.
