RICE AND BEANS

Ingredients

1 tablespoon olive oil

1 medium onion, chopped

3 garlic cloves, minced

2 cups cooked white rice

1, 15-ounce can black beans, drained and rinsed

1 teaspoon cumin

1 teaspoon Dish off the Block Ragin’ Cajun Spice Blend

½ teaspoon salt

2 tablespoons fresh lime juice

⅓ cup cilantro leaves, rough chopped

Instructions

Heat the olive oil in a large deep skillet over medium high heat and cook the onions and garlic until soft and fragrant, about 3 minutes.  Add the rice, beans, cumin, Cajun spice, salt, and lime juice to the pan and stir to coat.  Cook for 3 more minutes, stirring frequently.  Toss in the chopped cilantro just before serving and garnish with more whole cilantro leaves.
