RAGIN’ CAJUN OLD BAY BAKED CHICKEN WINGS
Ingredients
2 pounds chicken wings, cut into flats and drumettes
2 tablespoons Old Bay seasoning
2 tablespoons Dish off the Block Ragin’ Cajun Spice Blend
2 tablespoons olive oil
1 stick butter
10 large garlic cloves, chopped
Blue cheese or Ranch dressing for dipping
Instructions
Preheat oven to 425 degrees. Line a large rimmed baking sheet with foil and place a metal cooling rack on top of it. This will allow air to circulate around the wings in the oven and make the wings crispy all over.
Pat the chicken wings very dry with paper towels and place them in a large bowl. Place the Old Bay and Ragin’ Cajun in a small bowl and whisk to combine. Sprinkle this spice mixture over the wings. Toss them in the bowl until they are all evenly coated in the seasoning – I find this easiest done with my hands.
Place the wings on the wire rack on the baking sheet evenly spaced. Do not crowd them.
Bake for 25-35 minutes until they are cooked through and juices run clear when pierced with a steak knife. Broil for 1-2 minutes more (6” from the broiler). Watch them closely so they do not burn depending on the strength of your broiler – you just want them to be golden brown and crispy!
While the wings cook, melt the butter in a small saucepan and add the garlic. Cook on low until very fragrant and the garlic is tender about 5-7 minutes.
When the wings come out of the oven brush the garlic butter all over. Serve hot with blue cheese or ranch dressing on the side for dipping – and lots of napkins!
