PEANUT BUTTER BANANA BREAD
Ingredients
3 large VERY ripe bananas
¼ cup butter
½ cup smooth peanut butter, divided
½ cup sugar
½ cup brown sugar
1 teaspoon vanilla
1 large egg, beaten
1 ¾ cup flour
1 teaspoon salt
1 teaspoon baking soda
½ teaspoon baking powder
2 tablespoons roasted peanuts, rough chopped
Instructions
Preheat oven to 350 degrees. Coat a loaf pan with non-stick cooking spray.
Mash the bananas in a large bowl with a fork.
Melt the butter and ¼ cup of the peanut butter together in a small saucepan and add it to the bowl with the bananas along with the sugars and vanilla. Stir to combine. Mix in the egg.
Combine the flour, salt, baking soda, and baking powder in a separate bowl and whisk to combine. Add the dry ingredients to the bowl with the banana mixture and mix everything together until just combined.
Pour the batter into the prepared loaf pan. Place small dollops (about 1 teaspoon each) of peanut butter over the top of the batter. Using the tip of a steak knife, pull the knife through the dollops, making swirling motions, to create a pretty design on the top. Sprinkle the chopped nuts over the top.
Bake for 45-50 minutes until a knife inserted in the center comes out clean. Let cool for 20-30 minutes. Slice and devour!
