PEACH AND PLUM COBBLER
Ingredients
6 cups very ripe peaches and/or plums, pitted and cut into 1” dice
2 tablespoons brown sugar
1 ½ tablespoons corn starch
⅛ teaspoon salt
¼ teaspoon cinnamon
¼ teaspoon nutmeg
1 tablespoon lemon juice
2 teaspoons vanilla
2 cups Bisquick baking mix
2 tablespoons sugar
½ cup milk
2 tablespoons melted butter
Instructions
Preheat oven to 425 degrees. Coat a small baking dish or large pie plate with non-stick spray.
Mix the peaches, brown sugar, corn starch, salt, cinnamon, nutmeg, lemon juice, and vanilla in a large bowl. Spread this mixture in the prepared baking dish.
Mix the Bisquick with the sugar, milk, and melted butter until it just comes together. Place this mixture in evenly-spaced, large dollops over the top of the fruit.
Bake for 35-45 minutes until golden brown on top, bubbly, and the dough is cooked through. Let cool for 10-15 minutes and serve warm topped with vanilla ice cream.
