PAN CON TOMATE (SPANISH TOMATO TOAST)

Ingredients

1 loaf crusty Artisan style bread, cut into 1-1 ½” thick slices

4-6 tablespoons olive oil

4 garlic cloves

2-3 large very ripe garden tomatoes

2-3 teaspoons flaky sea salt

Instructions

Preheat oven to 400 degrees.  Line a sheet pan with parchment paper.

Place the bread slices on the baking sheet and drizzle them generously with olive oil.  Bake for 6-8 minutes until the bread is toasty on the outside but still soft inside. You could also toast them on a grill.

Rub the raw garlic cloves all over the toasty tops of the bread slices.

Cut a small piece of the bottom of each tomato.  Grate the tomatoes on the large holes of a box grater, creating a tomato pulp.  Discard the skin which will be left in your hand after grating each tomato.

Spread a ¼” thick layer of the tomato pulp over the tops of each piece of toast.  Drizzle with more olive oil and sprinkle the sea salt over the top.  Serve immediately.
