OVEN ROASTED GARDEN TOMATO SAUCE
Ingredients
14-16 cups garden tomatoes, cut into 2-3” chunks (or whole cherry and grape tomatoes)
1 large onion, chopped into 2” wedges
10 garlic cloves, cut in half if large
2 teaspoons Dish off the Block Ciao Bella Italian Spice Blend
1 ½ teaspoons salt
½ teaspoon black pepper
½ cup olive oil
½ cup basil leaves
Instructions
Preheat oven to 400 degrees and line a large rimmed baking sheet with foil.
Place the tomatoes on the baking sheet along with the onions and garlic. Sprinkle the Italian seasoning, salt, and black pepper over the top and lightly toss so that everything is evenly coated. Drizzle the olive oil all over the tops.
Bake for 1 hour tossing every 15 minutes until the tomatoes cook down and are lightly charred.
Place the tomatoes, onions, garlic, and all of the juices from the pan into a food processor or blender along with the basil and blend until smooth.
Serve over pasta or gnocchi. So good!
Note – This sauce can also be frozen for up to 1 year so you can enjoy fresh garden tomato sauce year round!
