MOLASSES SPICE COOKIES
Ingredients
4 ½ cups flour
4 teaspoon baking soda
1 teaspoon salt
3 teaspoon cinnamon
2 teaspoon ground ginger
1 ½ teaspoon ground cloves
1 ½ cups butter, softened
1 cup dark brown sugar, packed
1 cup granulated sugar
2 extra large eggs
2 teaspoon vanilla
⅔ cup unsulphered molasses
Instructions
Preheat oven toi 375 degrees.
In a large bowl mix flour, baking soda, salt, cinnamon, ginger, and cloves.
In another large bowl combine the butter with sugars and beat with an electric mixer until light and fluffy. Add eggs, vanilla and molasses and beat until smooth. Stir in the dry ingredients.
Roll the dough into 1 ½ “ – 2” balls. Place ⅔ cup of granulated sugar in a pie plate or shallow dish. Roll each ball in the sugar to coat and place on ungreased cookies sheets 3” apart.
Bake for 10 minutes until the surface is cracked and the centers are soft and puffy. They should be slightly under cooked to remain chewy.
