MOJITO

Ingredients

8 large fresh mint leaves (plus 1 whole mint sprig for garnish)

1 lime, cut into ¼” thick rounds

1 teaspoon sugar

¼ cup simple syrup (recipe below)

¼ cup Bacardi rum

Approx. ¼ cup soda water

 

Simple Syrup

1 cup water

1 cup sugar

Instructions

Place the mint leaves, 2 lime rounds, and the sugar into a 10 ounce cocktail glass.  Muddle everything together with a pestle or the end of a wooden spoon, working hard to crush the mint leaves and really smash the limes.

Fill the glass with ice and add the simple syrup and rum.  Add another ring of the lime and pour the club soda to the top of the glass.  Stir to combine so mint and lime are woven throughout the ice.

Garnish with a mint sprig and another lime round on the edge of the glass.

Simple Syrup

Combine water and sugar in a small sauce pan and bring to a boil, stirring frequently, until sugar is completely dissolved.  Cool completely and then refrigerate in a jar or bottle for up to 1 month.
