MAPLE SOY SALMON

Ingredients

¼ cup beer

¼ cup maple syrup

¼ cup soy sauce

2 tablespoons rice vinegar

2 tablespoons brown sugar

2 tablespoons honey

¼ teaspoon black pepper

3 garlic cloves, minced

1 – 1 ½ pounds salmon filet

Instructions

Whisk all of the ingredients, except the salmon, together in a medium size bowl to create the marinade.  Place the salmon in a shallow baking dish (large enough so that it can lay flat or cut into portions to make it fit in a single layer).  Pour the marinade over the salmon and turn to full coat Let marinade in the refrigerator for 1 hour.

Preheat oven to 375°.  Cover a rimmed baking sheet with foil.  Spray with cooking spray.

Remove the fish from marinade and let any excess liquid drip back into the dish.  Place salmon on the baking sheet, skin side down, and bake for 10-14 minutes until it flakes in the middle.  The flesh should be slightly translucent in the center and flake easily with a fork.  Place under the broiler (about 8″ below) until top of fish is lightly browned, about 1 minute.  Watch it closely so it doesn’t burn!!

I created this marinade for some fresh Northwest salmon I bought at the famous Pike Place Market in Seattle, WA in 1995 while on a business trip. It’s rich, sweet flavor has received rave reviews ever since.
