MANGO AND TOMATO SALSA
Ingredients
2 large very ripe mangoes, peeled and chopped
1 pint grape tomatoes, cut in half or quarters if large
1 small onion, chopped
2 cloves garlic, minced
1 jalapeño, chopped (seeds included unless you like less spice, then seeds removed)
½ cup fresh cilantro leaves, chopped
Juice from one lime
¼ cup olive oil
1 tablespoon brown sugar, packed
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon cumin
Instructions
To make the salsa, mix all of the ingredients together in a large bowl and toss to combine.
