LEMONY GARLIC SPINACH AND GARBANZO BEANS
Ingredients
2 tablespoons butter
2 tablespoons olive oil
1 small onion, chopped
8 cloves garlic, chopped
10 ounces baby spinach leaves
1, 15 ounce can garbanzo (chick peas) beans*, drained
½ teaspoon salt
¼ teaspoon black pepper
1 ½ tablespoons lemon juice
Instructions
Heat the butter and olive oil in a large deep skillet over medium high heat. Add the onions and garlic and cook, stirring frequently, until soft and fragrant, about 2-3 minutes. Add the spinach and continue to cook tossing the spinach until it is just wilted. Stir in the garbanzo beans and add the salt, pepper, and lemon juice to the pan. Cook for 1- 2 minutes more until everything is well combined and coated. Serve hot.
*Note – cannellini or butter beans would also be delicious in this dish
