GREEN MACHINE CUCUMBER, FETA, AND AVOCADO SALAD

Ingredients

½ cup sour cream

2 tablespoons cider vinegar

1 tablespoon brown sugar

2 teaspoons Dijon mustard

1 teaspoon salt

1 teaspoon black pepper

8-10 cups cucumber, chopped into 1” pieces

3 avocados, chopped into 1” pieces

1 cup edamame beans, shelled

½ cup scallions, chopped

2 tablespoons mint leaves, chopped

8 ounces feta cheese, crumbled

Instructions

Combine the sour cream, vinegar, brown sugar, mustard, salt and pepper in the bottom of a large bowl.  Whisk to combine.

Add the cucumbers, avocado, edamame, scallions, and mint to the bowl and toss to fully coat.  Fold in the feta cheese.  Garnish with more scallions and mint leaves. Serve immediately or keep cold in the fridge for up to 1 hour.
