GREEN GODDESS CAPRESE CRUNCH SALAD
Ingredients
The Green Goddess Dressing:
1 cup plain Greek yogurt
¼ cup buttermilk
¼ cup olive oil
2 cloves garlic, rough chopped
4 tablespoons fresh squeezed lemon juice
½ cup fresh parsley leaves
½ cup fresh dill
¼ cup fresh mint
¼ cup fresh basil
2 tablespoons chives
2 tablespoons honey
2 teaspoons Dijon mustard
½ teaspoon salt
¼ teaspoon black pepper
The Salad:
1 pint cherry or grape tomatoes, cut in half
1 cup English cucumber, chopped
1 pound small mozzarella balls (about the size of a grape)
¼ cup wasabi peas, crushed with a meat pounder in a ziplock bag
¼ cup sesame seeds
¼ cup fresh basil leaves, chopped
¼ cup fresh mint leaves, chopped
¼ cup grated parmesan cheese
Instructions
Combine all of the dressing ingredients in a food processor or blender and process until smooth.
Combine all of the salad ingredients in a large bowl. Add about 1/3 cup of the dressing and toss until everything is well coated. Add more dressing to desired consistency. Any remaining dressing will keep in the fridge for up to 2 weeks.
