FUSION FANTASY SHRIMP PUFFS
Ingredients
The Puffs:
1 tablespoon olive oil
½ cup red pepper, finely chopped
½ cup yellow pepper, finely chopped
¼ cup orange pepper, finely chopped
¼ cup orange pepper, finely chopped
1 ½ tablespoons Lucky Foods Seoul Kalbi sauce
1 sheet frozen puff pastry, thawed
2 tablespoons Lucky Foods Seoul Kimchi Mayo
The Shrimp:
3 tablespoons lemon juice
1 tablespoon Lucky Foods Seoul Gochuchang
3 cloves garlic, finely chopped
12 large shrimps
Toppings:
½ cup feta cheese, crumbled
½ cup honey roasted pistachios, chopped
½ cup scallions, chopped
¼ cup cilantro leaves
Instructions
Preheat oven to 400 degrees.
Heat the olive oil in a large skillet over medium high heat and add the chopped peppers. Cook, stirring frequently for 3-4 minutes until the peppers are soft and fragrant. Stir in the Kalbi sauce and cook 1 minute more until the sauce thickens and coats the peppers. Remove from heat and set aside.
Roll out the puff pastry on a lightly floured countertop into a 13” x 10” rectangle. Using a biscuit cutter, cut out 12, 3” rounds and place them on a parchment-lined baking sheet. Spread about ½ teaspoon of the kimchi mayo on each round and then top them each with an even amount of the sautéed peppers.
Combine the lemon juice, gochuchang, and garlic in a small bowl and whisk until smooth. Add the shrimp and let them marinade for 8-10 minutes.
Place one marinated shrimp on top of the peppers on each pastry round. Place them in the oven and bake for 10 minutes until puffed and golden.
Top the puffs with the feta, pistachios, scallions, and cilantro leaves.
