DILLY CHICKEN SALAD WITH PRUNES, GRAPES, AND WALNUTS
Ingredients
1 ¼ cups Hellmann’s Light Mayonnaise
2 tablespoons fresh dill, chopped
¾ teaspoon salt
½ teaspoon black pepper
2 teaspoons brown sugar, packed
2 teaspoons apple cider vinegar
3 cups cooked chicken breast*, shredded into small bite size pieces
1 cup California prunes, chopped
2 cups green grapes, cut in half
½ cup walnuts, chopped
Lettuce cups or rolls for serving
Instructions
Combine the mayo, dill, salt, black pepper, brown sugar, and vinegar in a large bowl and whisk to combine. Add the chicken, prunes, grapes, and walnuts to the bowl and toss, toss, toss until everything is evenly coated in the dressing.
Serve the salad in lettuce cups or soft rolls. DEVOUR!
*This is a great way to use up leftover chicken or turkey
