CREAM CHEESE CRANBERRY BREAD
Ingredients
1, 8 ounce package cream cheese, softened to room temperature
1 cup butter, softened to room temperature
1 ½ cups sugar
2 teaspoons orange zest
2 teaspoons pure vanilla extract
4 eggs
2 cups flour
1 ½ teaspoons baking soda
½ teaspoon salt
2 ¼ cups fresh whole cranberries
Instructions
Preheat oven to 350 degrees. Coat a 9” x 5” loaf pan with non-stick spray.
Cream the cream cheese, butter, and sugar together in the bowl of a stand mixer (or with electric beaters) scraping the sides down as needed with a rubber spatula so everything is combined. Add the orange zest and vanilla extract to the pan and mix to combine. Add the eggs, one at a time, beating after each to combine.
Mix the flour, baking soda, and salt in another bowl and whisk to combine. Add the dry ingredients to the wet ingredients by hand, mixing until just combines. Fold 2 cups of the cranberries into the batter and transfer to the prepared loaf pan. Dot the top of the batter with the remaining ¼ cup cranberries.
Bake for 1 hour or until a test in the center comes out clean. Let rest for 30 minutes. Slice and devour!
