CHIMICHURRI SAUCE
Ingredients
1 cup flat parsley leaves (some small stems are fine as well), packed
1 cup cilantro leaves (some small stems are fine as well), packed
¼ cup mint leaves, packed
6 garlic cloves, chopped
1 shallot, chopped (about ¼ cup)
¼ teaspoon salt
2 tablespoons lemon juice
¾ cup olive oil
Instructions
Place everything except ¼ cup of the olive oil in the bowl of a food processor. Pulse several times until everything is finely chopped, but not totally pureed. Scrape down the sides of the bowl and hit pulse a couple more times. Add the remaining ¼ of olive oil as needed to get the consistency you want.
Serve the sauce on steak, seafood, pork, roasted veggies, etc…. This Chimichurri adds bright flavor to almost any dish!!
