BROWN BUTTER TOFFEE CHOCOLATE CHUNK COOKIES

Ingredients

2 sticks butter (1 cup)

1 cup dark brown sugar, packed

⅓ cup sugar

2 large eggs

2 teaspoons pure vanilla extract

2 cups flour

1 teaspoon baking soda

1 teaspoon salt

1 ½ cups rough-chopped Heath bars (or toffee chips)

1 ½ cups chocolate wafers, rough-crushed

Sea salt

Instructions

Preheat oven to 375 degrees.

Cook butter in a medium sauce pan over medium high heat, stirring frequently, until it foams and turns a golden-brown color, about 7-8 minutes.  Pour into a large bowl and let cool to room temperature.

Add the brown sugar, granulated sugar, and vanilla to the butter and, using an electric mixture beat for about 1 minute until well combined.  Add eggs and beat for another 30 seconds until smooth and lighter in color.

Combine flour, baking soda, and salt in a separate bowl.  Reduce mixer speak to low and slowly add dry ingredients until just combined.

Fold in the Heather bars and chocolate wafers.  Let sit for 30-40 minutes to let the batter congeal and thicken.

Roll into 1 ½” – 2” balls and place 3” apart on parchment lined baking sheets.  Sprinkle with sea salt.

Bake for 10-12 minutes until edges are browned but centers are still soft.  Let sit for 10 minutes before removing from pans.
