BLUEBERRY BOMB GREEN GODDESS SALAD
Ingredients
The Dressing:
1 cup plain Greek yogurt
¼ cup buttermilk
¼ cup olive oil
2 cloves garlic, rough chopped
4 tablespoons fresh squeezed lemon juice
½ cup fresh parsley leaves
½ cup fresh dill
¼ cup fresh mint
¼ cup fresh basil
2 tablespoons chives
2 tablespoons honey
2 teaspoons Dijon mustard
½ teaspoon salt
¼ teaspoon black pepper
The Salad:
7 ounces butter lettuce or salad greens
1 cup blueberries
½ cup edamame beans, shelled
½ cup pistachios, shelled
1 cup English cucumber, chopped
½ cup pea shoots
Instructions
Combine all of the dressing ingredients in a food processor or blender and process until smooth.
Combine all of the salad ingredients in a large bowl. Top with 2/3 of the dressing and toss. Add more dressing for desired consistency.
