BEER BATTERED ONION RINGS
Ingredients
3-4 cups vegetable oil for frying
1 ½ cups flour, divided
¾ cup corn starch
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon black pepper
½ teaspoon paprika
1, 12-ounce beer
2 large Vidalia or sweet onion, sliced into ½” thick rings
Sea salt for seasoning
Instructions
Heat the oil in a Dutch oven or fryer to 375 degrees.
Combine 1 cup of the flour, the cornstarch, baking powder, salt, pepper, and paprika in a large bowl and whisk to combine. Pour the beer into the bowl whisking constantly until a smooth batter forms.
Put the remaining ½ cup of flour into a large zip lock bag. Separate 1 of the onions into individual rings and add to the bag. Shake to full coat all of the onions with the flour.
Coat the rings in the batter and carefully drop into the hot oil, careful not to crowd. Cook for 2-3 minutes, flipping occasionally with a spider or metal tongs, until golden brown. Repeat with the rest of the onions.
Place paper towels on a rimmed baking sheet and place a wire cooking rack on top. Remove the golden onion rings from the oil onto the rack and season immediately with sea salt. Let cool for a couple of minutes before eating (if you can wait)! Serve with ketchup or horseradish sauce for dipping.
