BANANA CRUMB CAKE

Ingredients

The Cake:

4 large very ripe bananas

½ cup butter, softened

1 cup sugar

2 teaspoons pure vanilla extract

2 eggs

1 ¾ cup flour

1 teaspoon salt

1 teaspoon baking powder

1 teaspoon baking soda

The Crumble Topping:

½ cup butter, softened

1 cup flour

½ cup brown sugar, packed

1 teaspoon cinnamon

Instructions

Preheat oven to 350 degrees.  Coat a 9” x 13” baking dish with non-stick spray.

Mash the bananas in a small bowl with a fork or potato masher.   Set aside.

In a large bowl combine the butter and sugar.  Beat with an electric hand mixer (or in a stand mixer) until smooth.  Add the vanilla and eggs and beat again until smooth.  Stir in the mashed bananas by hand.

In a separate bowl, whisk together the flour, salt, baking powder, and baking soda.  Stir the dry ingredients into the wet until just combined.  Pour the batter evenly into the prepared baking dish.

Combine all of the crumble ingredients in another bowl and mix with a fork until it is crumbly in texture with pea size bits.  Do not overmix.  Spread the crumble evenly over the top of the batter.  Bake for 40-45 minutes until a knife inserted in the center comes out clean.
