BANANA BREAD
Ingredients
3 large very ripe bananas
¼ cup melted butter
1 tablespoon vanilla
1 egg
1 cup sugar
1 ½ cups flour
1 teaspoon baking soda
1 teaspoon salt
Optional-1 cup chopped walnuts or chocolate chips
Instructions
Mash bananas with a fork.
Mix in butter, vanilla, and egg with smashed bananas.
Stir in sugar until batter reaches an even consistency.
Mix dry ingredients in a separate bowl and add to the banana mixture, stirring until all dry ingredients are “absorbed” into the bananas.
Pour batter into a greased 9″x5″ loaf pan.
Place into a 350°, preheated oven and bake for 40-50 minutes or until tester comes out clean.
My mother made this bread throughout my childhood. As it bakes it fills the air with a wonderful aroma that reminds me of home. It is also the moistest, richest version of banana bread that I’ve had yet-but I’m biased!
