BAKED APPLE SQUARES
Ingredients
2 cups flour
1 teaspoon baking powder
2 heaping teaspoons cinnamon
½ teaspoon salt
3 eggs
1 ¾ cups sugar
1 teaspoon vanilla
1 cup oil
2 cups apples, peeled and very thinly sliced
Instructions
Preheat oven to 350°. Coat a 9″ x 13″ baking dish with non-stick spray.
Combine the flour, baking powder, cinnamon, and salt in a small bowl and whisk to combine
In another large bowl, beat the eggs with an electric mixture and add sugar gradually. Continue to beat until light and fluffy, about one minute.
Stir in premixed dry ingredients by hand. Add the oil and vanilla and mix well until all of the oil is incorporated into the batter. Fold in the apple slices.
Turn the batter into the prepared baking dish. Bake for 40-45 minutes until nicely browned on the top and a tester in the center comes out clean.
Cool on a rack for 20-30 minutes and cut into squares.
This is a great use of those sad looking apples that have been sitting around for a while with some bumps and bruises. Sooo good!! A family favorite in our house!!
