BACON, SWISS, AND ONION CROSTINI
Ingredients
½ pound raw bacon, chopped
2 cups Jarlsberg cheese, shredded (or any high quality Swiss cheese)
1 ½ cups onion, chopped fine
¼ cup Hellmann’s Light Mayonnaise
1 teaspoon black pepper
¼ cup chopped parsley
1 large French baguette, sliced into ½” thick rounds
Instructions
Preheat your broiler to high and place a rack 5-6” from the heating coil. Line a rimmed baking sheet with foil.
Mix the bacon, cheese, onion, mayo, black pepper, and parsley in a large bowl until well combined.
Spread a heaping tablespoon of this mixture on each slice of baguette and place on the prepared baking sheet.
Place the baking sheet under the broiler and cook for 3-5 minutes until the tops are browned and bubbling. Serve hot.
