APPLE CIDER DONUT CAKE
Ingredients
3 cups flour
2 ½ teaspoons cinnamon
1 ½ tablespoons baking powder
1 teaspoon salt
1 cup vegetable oil
1 cup sugar
1 cup brown sugar
1 cup grated apple (peeled first)
¼ cup apple sauce
¼ cup sour cream
3 eggs
1 cup apple cider
Topping:
¼ cup butter, melted
¼ cup sugar
2 teaspoons cinnamon
Instructions
Preheat oven to 350 degrees.
Combine the flour, cinnamon, baking powder, and salt in a bowl. Whisk to combine. Set aside.
Place the oil, sugar, brown sugar, grated apple, apple sauce, and sour cream in the bowl of a stand mixer. Beat with the paddle attachment until well combined. Add the eggs, one at a time, beating after each to combine.
Alternately add the flour mixture and cider in three steps, beating after each addition. Scrape down the sides of the pan and beat once more to combine.
Pour the batter into a non-stick bundt pan coated with non-stick spray. Bake for 45-50 minutes until a knife inserted into the center comes out clean. Let cool on a wire rack for 30 minutes.
Turn the cake out onto a plate or cake plate. Brush all over with the melted butter. Combine the sugar and cinnamon in a small bowl and press onto the cake to coat all over.
Slice and devour! Delicious with your morning tea or as a dessert, warmed, with vanilla ice cream.
