ZING-A-LING BROILED HORSERADISH, PARMESAN, AND BACON OYSTERS
Ingredients
12 fresh oysters, in the shell
½ cup mayonnaise
2 tablespoons prepared horseradish
1 teaspoon Dijon mustard
1 cup shredded parmesan cheese
4 slices of bacon, cooked to almost crisp
2 tablespoons chives or parsley, chopped
Instructions
Preheat oven to 400 degrees. Line a rimmed baking sheet with parchment paper.
Shuck the oysters and loosen the meat in the bottom shell with the oyster knife. Discard the top shell and place the deeper bottom shell with the oyster meat on the baking sheet.
Combine the mayonnaise, horseradish, and mustard in a small bowl and whisk to combine. Spread 1 ½ – 2 teaspoons of this mixture on top of each oyster. Top with a heaping tablespoon of the parmesan cheese.
Cut each slice of bacon into 3 equal pieces and place one piece on each oyster.
Cook for 8-10 minutes until melted and bubbly. Sprinkle the chopped chives or parsley over the tops of the oysters.
