PEACH AND GOAT CHEESE BRUSCHETTA WITH HOT HONEY AND PISTACHIOS
Ingredients
1 large French baguette
½ cup olive oil
8-ounces goat cheese, softened to room temperature
6-7 ripe peaches, cut into thin slices
¼-⅓ cup Heinz 57 Collection Infused Honey with Hot Chili
¼ cup pistachios, shelled and finely chopped
¼ cup basil leaves, chopped if they are large
Instructions
Preheat oven to 400 degrees and line a rimmed baking sheet with foil.
Cut the baguette into ½- ¾” thick slices. Brush them on both sides with the olive oil and place them on the baking sheet. Bake for 8-10 minutes until they are toasty on the outside but still soft in the center. Let them cool for 15 minutes or until you can handle them.
Spread a layer of goat cheese, about 1 tablespoon, on the tops of each slice. Lay 2-3 slices of peach on top the goat cheese, overlapping. Drizzle the honey over the tops of the bruschetta and sprinkle some chopped pistachios on each. Top with the basil leaves.
These yummy bruschetta are as delicious as they are pretty!! The perfect summer bite!! Sweet peaches, creamy goat cheese, and spicy infused honey with hot chili sing in spicy sweet harmony on top of toasted bread and finished with crunchy pistachios!
