CHERRY TOMATO AND BASIL PASTA
Ingredients
⅓ cup olive oil
1 large onion, chopped
6 large garlic cloves, chopped
3 cups cherry tomatoes, cut in half
1 teaspoon salt
1 teaspoon black pepper
½ cup heavy cream
½ cup basil, chopped
1 pound thin spaghetti, cooked al dente (I also love this dish with angel hair)
Parmesan cheese
Instructions
Heat oil in a large skillet over medium high heat. Add onions and garlic and sauté until soft and fragrant, about 3 minutes. Add tomatoes, salt, and pepper and cook for 3 more minutes more until tomatoes start to soften. Add heavy cream and basil and cook for another 3 minutes, stirring frequently. Serve over pasta and sprinkle with parmesan cheese.
