BANANA TOFFEE CHOCOLATE CHIP SQUARES
Ingredients
¼ cup butter
4-5 very ripe bananas (spotted brown-black is good!!)
2 eggs, beaten
¾ cup brown sugar
1 teaspoon vanilla
¼ cup heavy cream
½ cup sweetened coconut flakes
1 ¾ cups flour
1 teaspoon baking soda
1 teaspoon salt
¾ cups toffee bits
1 ¼ cups semi-sweet chocolate chips
Instructions
Preheat oven to 350 degrees and prepare a 9” x 13” baking dish with non-stick spray.
Melt the butter in a sauce pan and cook until it foams and turns golden brown in color. Set aside.
Peel and mash the bananas in a large bowl. Add the butter, eggs, brown sugar, and vanilla to the bananas and mix well. Add the heavy cream and coconut flakes and stir to combine.
Combine flour, baking soda and salt in a small bowl and whisk to combine. Add the dry ingredients into the wet ingredients and stir until just combined. Fold in the toffee bits and 1 cup of the chocolate chips.
Pour the batter in to the prepared dish and sprinkle with remaining ¼ of chocolate chips. Bake for 30 minutes until golden brown and tester comes out clean in the center.
Let cool completely and cut into squares.
Also, delicious warm served with a scoop of vanilla ice cream…. Just sayin’!
