EASY SLICE AND BAKE REFRIGERATOR PEANUT AND CHOCOLATE CHIP COOKIES

Ingredients
1 stick butter, softened to room temperature
1 cup brown sugar, packed
1 teaspoon pure vanilla extract
1 egg
1 ¼ cups flour
¼ teaspoon baking soda
¼ teaspoon salt
¼ cup honey roasted peanuts, chopped
⅓ cup mini chocolate chips
Instructions
Beat the butter, brown sugar, and vanilla in a large bowl, scraping down the sides as needed, until it is smooth and creamy. Add the egg and beat until well blended.
Add the flour, baking soda, and salt to the bowl and mix with a spoon or rubber spatula until well combined. Fold in the peanuts and chocolate chips.
Form the dough into a log and wrap it tightly in plastic wrap. Refrigerate for at least 3 hours or, preferably overnight.
Preheat oven to 375 degrees and line a large baking sheet with parchment paper. Cut the dough into ¼ – ½” thick slices and place on the prepared baking sheet about 1” apart. Bake for 6-8 minutes until golden brown. Remove to a wire rack and cool for 15 minutes. Devour!
