3 INGREDIENT HIGH PROTEIN COTTAGE CHEESE BAGELS

Ingredients

1 cup of cottage cheese

1 cup of flour

2 teaspoons baking powder

½ teaspoon salt

1 egg yolk, beaten

1-1 ½ tablespoons everything bagel seasoning (or your favorite bagel topping – poppy seeds, sesame seeds, cinnamon sugar, etc…)

Instructions

Preheat oven to 375 degrees.  Line a baking sheet with parchment paper and place it in the oven to preheat (you will place the bagels on a hot pan so the bottom gets crispy).

Place the cottage cheese in a blender or food processor and process until it is very smooth.  Remove to a large bowl.  Add the flour, baking powder, and salt to the bowl and mix with a rubber spatula until it comes together and most of the flour is absorbed.

Turn the dough onto the countertop and push it together with your hands to form it into a ball.  If it is very sticky, add a little bit of flour so that it does not stick to your hands.  Do not over work the dough.

Divide the dough into 4 equal pieces.  Form each piece into a ball and poke a hole in the middle. Shape the dough around the hole with your fingers forming a ring/bagel shape.  Note – the bagels will rise/puff-up in the oven so make the hold larger than the standard hole in a bagel or it will seal together as it cooks.

Brush each ring all over with the egg wash and coat liberally with the seasoning.

Remove the pre-heated baking sheet from the oven and place the bagels on the parchment 4-5 inches apart (remember, they will expand during baking.

Bake for 20-25 minutes until they are puffed up and golden brown.  Let sit for 10-15 minutes before cutting.  Also great toasted the next day!
