TUSCAN BAKED SHRIMP SCAMPI
Ingredients
1 ½-2 pounds large or jumbo prawns or shrimp, head and shell on*
1 stick butter (8 tablespoons), melted
¼ cup garlic, chopped
½ teaspoon salt
½ teaspoon red pepper flakes
½ teaspoon Dish off the Block Ciao Bella Italian Spice Blend
1 pint cherry or grape tomatoes, cut in half
½ cup fresh parsley, chopped
¼ cup fresh dill, chopped (plus more for garnish)
2 tablespoons lemon juice
¼ cup grated parmesan cheese
6 tablespoons olive oil
1 loaf ciabatta or French bread, sliced and brushed with olive oil and lightly toasted
Instructions
Preheat oven to 400 degrees.
Place the prawns/shrimp in a pie plate or shallow baking dish ‘spooning’ in concentric circles.
Combine the butter, garlic, salt, red pepper flakes, and Italian seasoning in a medium saucepan and cook over medium heat, stirring for 2-3 minutes until the garlic is soft and fragrant. Remove from heat and stir in the parsley, dill, and lemon juice.
Pour this garlic and herb butter evenly over the prawns/shrimps. Sprinkle the parmesan and drizzle the olive oil evenly over the top. Bake for 15-20 minutes until the prawns/shrimp are pink, curled and cooked through. Total time will depend on the size of the prawns.
Serve this incredible scampi with toasted bread on the side for sopping up that amazing garlicky shrimp butter. If you peel the shrimp, this dish is also amazing over pasta with a sprinkle of parmesan cheese and some fresh basil leaves.
*This dish can also be made with regular or smaller shrimp, peeled and deveined, but cooking time will be considerably shorter depending on the size of the shrimp and if they have no shell.
