PROTEIN-PACKED AVOCADO EGG SALAD
Ingredients
6 large hard boiled* eggs, peeled
1 avocado, peeled and pitted
½ cup cottage cheese
2 tablespoons Hellmann’s Light Mayonnaise
1 teaspoon Dijon mustard
1 tablespoon lemon juice
½ teaspoon salt
¼ teaspoon black pepper
½ teaspoon turmeric
½ teaspoon celery seed
⅓ cup scallions, chopped
Instructions
Place the eggs, avocado, and cottage cheese in a large bowl and mash everything to small pieces with a fork. Add the rest of the ingredients to the bowl and mix thoroughly. Serve immediately on toast, in a sandwich, or on top of a salad.
*To make the hard boiled eggs, place them in a saucepan and cover them by 2” with cold water. Bring the water to a boil, turn off the heat, and cover the pot. Let them sit for 10 minutes and then place the eggs in an ice water bath. Peel under cold running water.
