CRAZY-GOOD CRABMEAT STUFFING
Ingredients
1 stick butter
4 large cloves garlic, chopped
30 Ritz crackers, crumbled
1 cup Panko breadcrumbs
½ cup parmesan cheese
½ cup mayonnaise
the juice from one lemon
½ cup fresh parsley, chopped
1 pound premium lump crabmeat
1 teaspoon paprika
For Fish:
2 ½ pounds fresh white fish filets like haddock or cod (skinned).
Instructions
Melt the butter in a medium sauce pan with chopped garlic. Sauté until garlic is fragrant.
Gently mix garlic butter with crumbled crackers, panko, parmesan, mayo, lemon juice, parsley, and crabmeat in a large bowl until just combined.
This stuffing can be used for fish or chicken.
For Fish:
Preheat oven to 375 degrees. Cover a large cookie sheet with foil and spray with nonstick oil. Lay filets on the sheet and season liberally with salt and pepper. Top filets evenly with stuffing. Sprinkle all over with the paprika. Bake for 25-35 minutes, depending on the thickness of the filets. Fish should be just cooked through and flake easily with a fork. Stuffing should be crispy on top and moist and delicious inside…. Sooooo Gooooood!!!
