KRISPY CHOCOLATE PEANUT BUTTER SQUARES
Ingredients
2 ½ cups Rice Krispies Cereal
½ cup light corn oil
½ cup brown sugar
1 ½ cups peanut butter, divided
1 cup semi-sweet chocolate chips
2 tablespoons powdered sugar, divided
Instructions
Place the cereal in a large bowl and set aside. Prepare an 8” x 8” baking dish with non-stick spray.
Combine the corn oil and brown sugar in a medium saucepan over medium high heat. Bring to a boil, whisking until smooth. Reduce the heat to low and add 1 cup of the peanut butter, whisk until well combined. Add to the bowl with the Rice Krispies and toss until all of the cereal is well coated. Let cool for 10-15 minutes.
Fold in the chocolate chips. They will start to melt so work quickly leaving some chunks.
Press half of this mixture into the baking dish firmly using wet fingers (the water will keep it from sticking to your fingers). Spread the remaining ½ cup of peanut butter over the top of this layer and sprinkle evenly with 1 tablespoon of the powdered sugar.
Firmly press the other half of the cereal mixture in an even layer on top and dust with the remaining tablespoon of powdered sugar. Let set for 1 hour. Cut into squares and enjoy!
