STRAWBERRY BANANA BREAD

Ingredients

1 very ripe banana

1 cup very ripe strawberries

½ cup butter, melted

¼ teaspoon lemon extract

1 teaspoon vanilla extract

¼ cup Hellmann’s Light Mayonnaise

1 egg

1 cup sugar

¼ cup cornmeal

1 ½ cups flour

½ teaspoon baking soda

½ teaspoon baking powder

1 teaspoon salt

Instructions

Preheat oven to 350 degrees.

Place the banana and strawberries in a large bowl and mash with a fork or potato masher.  If there are large chunks of strawberries, use a knife to cut into small pieces.  Add the melted butter, lemon extract, vanilla extract, mayo, egg, and sugar to the bowl and mix well.

Combine the cornmeal, flour, baking soda, baking powder, and salt in another bowl and whisk to combine.  Add the dry ingredients to the wet and stir to combine.

Spray a loaf pan with non-stick spray and pour the batter into the pan.  Bake for 45-50 minutes until a knife inserted in the center comes out clean.  Let cool for 20 minutes before slicing.  Devour!
