OATMEAL FUDGE BARS

Ingredients

1 cup butter, softened

2 cups brown sugar

2 eggs

3 teaspoon vanilla

2 cups flour

1 teaspoon baking soda

1 teaspoon salt

3 cups quick oats

1 can sweetened condensed milk

2 tablespoon butter or margarine

1, 12 ounce package of semi-sweet chocolate chips

1 cup finely chopped nuts (optional)

2 teaspoon vanilla

Instructions

Cream butter and sugar.  Mix in eggs and vanilla until thoroughly blended.

Mix dry ingredients in a separate bowl and then add to the creamed mixture.  Set aside.

In another bowl combine the second grouping of ingredients (except nuts if you are using them).  Microwave for 2 minutes until chips are melted and when stirred the mixture is smooth and fudgy.  Mix in nuts if using.

Spread ⅔ of the oatmeal mixture in the bottom of a greased 9″ x 13″ pan.  Cover evenly with the fudge mix.  Dot with remaining oatmeal mixture in clumps.

Bake at 350° for 40-50 minutes, until top is nicely browned and bottom crust is cooked through.  Let cool for 30 minutes.  Cut into bars and devour with a cold glass of milk.
