CHEESY BACON AND SEA ASPARAGUS PESTO CROSTINI

I’m involved in a very cool blogger recipe challenge where I am competing against 30 other bloggers to create inventive and out of the box recipes using Foraged & Found Sea Asparagus Pesto.  Yes, that’s right – sea asparagus!  I received several samples to use in my recipe creations and was very curious to try the product.  Spoiler alert!  This pesto is absolutely delicious and packed with classic pesto flavors and a hint of lemon.

For my first appetizer entry,  I decided on a crostini that is quick, easy, and packed with flavor.  I had friends over to taste test this 7 ingredient wonder and loved watching their eyes go wide when they took their first bite! “What is this??  It’s so good!!”  The platter was quickly emptied and even the 2 year old loved it!!

These crostini are super fast and easy to make. (Note – you can skip to the bottom of this post for the full recipe or click any of the photos for a link to the recipe on the blog.)

Preheat the broiler in your oven to high and place the top rack 5-6” from the broiler coils.  Cover a rimmed baking sheet with foil.  Slice the baguette into ½-¾” thick slices and lay them on the baking sheet in a single layer.

Combine all of the remaining ingredients in a small bowl and mix well to thoroughly combine (I find it easiest to do this with my hand, but a rubber spatula will work too!).  Spread a heaping tablespoon of this mixture over the top of each bread slice to completely cover and place them back on the sheet pan.

Place the pan under the preheated broiler and bake for 3-5 minutes until bubbly and browned.  Watch them closely so they do not burn.  Cook time will vary depending on the heat of your broiler.  Garnish with more chopped parsley and serve hot.

1, 10-ounce loaf French baguette

1 ½ cups Jarlsberg cheese, shredded (or any high quality Swiss type cheese)

½-pound raw bacon strips, chopped

¾ cup onion, chopped

¼ cup flat leaf parsley, chopped (plus more for garnish)

2 tablespoons mayonnaise

1, 4-ounce jar Foraged & Found Sea Asparagus Pesto
